Such a fun take on fish!
The secret is how thin you can get that bread sliced. I have a loaf of sourdough from @balthazarbakery that I cut real thin and adhered to the skin side of a snapper filet using some wondra flour that would act as glue once it sits for a bit. Imagine the perfectly cooked fish we can achieve by roasting/toasting this bread without harming a delicate fish.
The sauce is just a cauliflower puree with a quick slaw made from shaved brussels, fennel & kohlrabi. Seasoned with lemon juice, honey vinegar, good olive oil & a touch of sumac. Lunch is served 🍽
