Nostalgically delicious, these guys are easier than you think! You can use white or dark meat or even both for this recipe, it’s really just preference. The MSG is not mandatory, this will still be delicious if you can’t find any. Lastly, make sure your chicken is par frozen, it is going to help keep your mix from becoming a gross paste and be on the side of a little more chunky. If you’re finding the par frozen disc a little hard to work with after it’s been out for a while, work intermittently in and out of the freezer to maintain your dinos shapes and to help keep it more pliable. You can freeze them once they’re cooked and reheat later in the oven!
1lb boneless chicken, par frozen
1 tsp garlic powder
1 tsp onion powder
1 tsp celery salt, if you don’t have no biggie
1/2 tsp smoked paprika
1/2 tsp MSG
For the dredge we’re using a classic flour-egg-panko method, similar to the Katsu method. The flour is just lightly seasoned with salt pepper and of course a little garlic powder.
Create a meat farce by blending all of the nugget ingredients together in a food processor. You can use a meat grinder as well for a more consistent texture but I do not own one of those so the food processor will do. Be sure not to overmix, you want it to still be a bit chunky with some medium sized pebbles of meat, we do not want a paste. Immediately press it out onto a lightly greased parchment paper lined sheet tray and pop it in the freezer for 30 minutes to firm up.
Using a cookie cutter of you’re choosing or you can even just shape these with your hands, begin to cut out our nuggets. Carefully extract them out of the cutter onto a plate or another sheet tray and pop them back in the freezer until you are ready for the next step. Keeping the nuggets chilled during the whole process will save you a massive headache.
Coat your nuggets in the Panko using the flour egg Panko method and keep them in the freezer until you are ready to fry. Fry these nuggets at 375 to grease for about three or four minutes or until the meat on the inside is perfectly cooked and you have a nice golden brown exterior. Enjoy them with the finest of ketchup or honey mustard you can find ❤️🦖
