Street corn, also know as Elotè, has been popping up more and more in restaurants and food trucks over the last decade. This super easy snack or side is just a few steps away from authentic deliciousness in your mouth!
Here’s what you’ll need:
6 medium ears of sweet corn, husks removed & split in half
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup minced cilantro
1 clove garlic, minced or grated
2 tablespoon lime juice
1/2 cup cotija cheese, crumbled
Lime wedges, to serve
Start by firing your grill up to high until it reaches about 400F.
In a medium bowl; combine sour cream, mayo, garlic and lime juice (you can also add the cilantro here or save for garnish or just do both!).
When the grill is ready throw on your corn and roast evenly on all sides until the kernels begin to turn golden brown and slightly charred (I prefer mine with some extra charr). This should take about 3 minutes or so on each side.
When the corn comes off the grill, while it is still hot, brush or roll the corn in the mayo & cream mix and garnish with fresh cilantro and crumbled cotija cheese (the best part duh). Serve with a wedge of lime and cold beer!
