Ora King Salmon Crudo!
Crudos are one of my favorite snacks in the summer. My fiancé and I literally make them 2 or 3 times a week thanks to our new fish market with the freshest fish all week long! @coldspringfish
I give my fish a quick cure in a cold salt/sugar bath for about 3 minutes just to lightly season and firm up the fish (equal parts salt sugar is fine). Next just give it another rinse and pat dry and your ready to serve! This isn’t necessary but makes a noticeable difference on the palate. In fact, I actually encourage you to cure all fish before consuming for optimal flavor, whether served cold or hot. If you are planning on cooking your fish, I suggest a dry cure of a salt/sugar mix.
Crudos are honestly super flexible so get inspired by your fridge and be creative! This was thrown together using whatever I had on hand…
-Olive oil, the good stuff
-Cucumbers
-Serrano chiles
-Wasabi cream
-Pickled ramps
-Flakey salt
