Piggy Pops! 🥓
This was one of those videos that just got lost this summer but man wouldn’t this kill at an Oktoberfest 😎 🍂

Spice Blend:
Garlic powder
Onion powder
Cayenne pepper
Chili pepper
Smoked paprika
Mustard powder
Ginger
Guajillo chili pepper
Cumin
Brown Sugar
Salt
Black pepper
-Brine your pork belly in apple juice over night. Its best to do this when they are already portioned, that way theirs greater surface area to get into all the meat.
-Pay them dry and cover in the above rub, allow them to sweat for 20 minutes before throwing them on the smoke
-Smoke at 250 F for 2 hours before adding them to the butter bath
-For my bath I did 2 sticks butter, 1 cup brown sugar, half cup maple syrup, cayenne and chili powder to your own taste and about 1 cup apple juice. Melt it together and then add the pops. Back on the smoke for 1 more hour!
-Lastly, fire up the smoker or grill to 450 F and throw your pops on. Glaze in the butter sauce or more maple until they’re practically candied.
If you’d like, omit the wet sticks, cut em a bit smaller and call em burnt ends! Enjoy 🐽
