Quick and easy Sunday sauce, using this really special chianti, wine infused salami from @volpifoods. Rendering this out to extract those wonderful juices and fat to then fry up the rest of our aromatics. This will also start layering some texture to our sauce from that crispy salami.
Once your onions are smelling divine you can add the garlic at the end and give it a quick 60 second sweat on medium heat. Do this last to ensure you don't burn your garlic. Next the tomato paste, roast this off until it tightens up then re-add the salami and tomatoes. Add a few basil leaves and some red pepper flakes right before letting this simmer for at least 20 minutes, longer if you have the time!
3oz salami
1 onion, diced
2 cloves of garlic, minced
1 can of San Marzano tomatoes, crushed
1/2 tablespoon tomato paste
few basil leaves
salt & pepper to taste
