Brine
1 gallon of cold water
1 cup of kosher salt
2 tablespoons of sugar
Mix together until all of the salt & sugar are dissolved. Allow the turkey to sit overnight in the fridge for best results!
Smoke at 250 for 2.5 - 3 hours or until the turkey is cooked to 170 and is tender as can be. I use hickory but you can use any wood you have. I also sprayed them down every 30 minutes with apple cider vinegar to prevent them from drying out.
Cranberry Habanero Sauce
12 oz of fresh cranberries
1/4 sugar
1.5 tablespoons rice vinegar
1 to 2 habaneros, you can take the seeds out if you want less heat
1 small lime, juiced and zested
A pinch of salt
A few sprigs of thyme & sage
Everything goes into a pot, cook for about 20 minutes over medium or until all of the berries have bursted and begin to reduce. We want a nice syrupy consistency.
You can choose to leave it chunky or blitz with a food processor and pass through a fine mesh sieve
