One of my favorite citrus fruits, kumquats!
These guys are like the original sour patch kids. The juice and flesh is tart while the skins give way to a fruity and sweet aftertaste. The entire fruit is edible although some people find the pits to be unpleasant. This is a simple technique for candying them, they will last up to two weeks or so in the fridge in their own syrup. The syrup is great for a number of things; soaking layers of cakes, using it in cocktails, drizzling on fruit or yogurt, etc. You could take this a step further and dehydrate or dry out the candied kumquats to have these nice hard chips or fruit wheels 🤷🏻♂️
