Ahh yes, The Big Mac, an American favorite. Two all beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame seed bun. SAY IT LOUDER FOR THE PEOPLE IN THE BACK
Y’all remember that commercial? I almost can’t recite a big mac without those words shortly following. Ohhhh the 90’s…
We’re gonna keep this recipe short and sweet. There’s other recipes here for not only grilling burgers but how to grind and pick your own blends as well. That’s not this post, those are found here. For this post, I’m just gonna cover the ever so popular special sauce recipe, as well as throw a few twists on it.
Classic
3/4 cup mayonnaise
1 tablespoon yellow mustard
2 tablespoons sweet pickle relish
2 teaspoons granulated sugar
1/2 teaspoon white wine vinegar
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Combine all ingredients together in a bowl, reserve in the fridge for up to 1 week.
Pretty simple, I know. Convinced someone at McDonalds just threw every condiment they could find into one container to consolidate space and boom, special sauce. Let’s take this recipe and be adults about it…
2.0
3/4 cup mayonnaise
1 teaspoon mustard powder
2 tablespoons chopped pickles or cornichons
1 tablespoon pickle juice
1 tablespoon ketchup
1/2 teaspoon white wine vinegar
1/2 teaspoon smoked paprika
1/2 garlic clove, grated
1/2 shallot, small diced
Salt + Pepper to taste
1 tablespoon of your favorite hot sauce, optional
Same method, combine all ingredients into a bowl and mix until homogenous. Hold in the fridge for up to 1 week. Note* this recipe is best made in advance allowing the flavors to marinate together for at least 1 hour.
