Got this board in from the @doghouseforge X Sasto Tools collection and it is AWESOME! There’s three different sections of patterns, one of which can be used to make 2 different patterns so 4 possibilities in total. Been using it a ton lately for ravioli impressions and Gnochetti Sardi, like the video above! This dish just screams Spring. The dough is made with only semolina flour & water with some spring onion juice thrown into some for some contrast.
- Start by sweating out some ramp stems in oil
- Next some dry white wine and reduce
- Melt in a nice pat of butter
- Some chopped pickled ramp stems
- Sweat some of the ramp leaves out too
- Good chunk of ramp butter from our previous video
- Add some pasta water, let it all melt together
- Add the pasta
- Grate some parmesan cheese & lemon juice
- Plate her up on a @connormcginnstudios plate
- More cheese & lemon zest
- Pea shoots
- Wild onion flowers
- Good olive oil
